The food of Puerto Rico did not arrive fully formed. It was built across centuries of encounter, resistance, and survival — Taíno agricultural traditions, African culinary techniques carried through generations, Spanish colonial influence, and the resilience of a people who absorbed all of it and made something distinctly, insistently their own.
La Isla is a dinner that honors that inheritance.
Chef Magdalis Galarza is cooking this evening. Born and raised in Puerto Rico, Magdalis began learning to cook at eight years old — in her grandmother's kitchen, at her mother's side, during the festivals and family gatherings that shaped her palate long before she ever entered a professional kitchen. The menu she has built for this evening is rooted in that lineage: slow-cooked meats, sofrito, rice and beans prepared the way they were meant to be, and the flavors…
